Title: Garlic-Basil Vinegar

Yield: 2 Servings

Elapsed time does not include letting Garlic-Basil Vinegar stand at room temperature for 2 weeks.

1/2 cup fresh basil leaves 1 clove garlic, crushed 2 cups vinegar (5% acidity) Additional sprigs of fresh basil (optional)

Slightly bruise basil, and place in a wide-mouth glass jar with garlic.

Place vinegar in a medium saucepan; bring to a boil. Pour vinegar over basil and garlic; cover with lid. Let stand at room temperature 2 weeks.

Strain vinegar into decorative jars, discarding basil and garlic residue; add additional sprigs of basil, if desired. Seal jars with a cork or other airtight lid. From: Sallie Krebs Date: 09-24-94
